Here’s something interesting, it’s called “Muhallabia”, an Arabian dessert, great to give kids a taste of something exotic!
1/2 a cup of rice, soaked in 1/2 a cup of milk for an hour
5 cups of milk
half a cup of white sugar
a handful of blanched, sliced almonds
a few drops of rose water
chopped pistachios
Blend the rice and the milk together, until it forms a completely smooth paste
Boil the rest of the milk in a large pan and pour this mixture, and also the sugar into it, stir it constantly over a low heat until the whole mixture thickens. Simmer after this, for 5 minutes. Add in the almonds and a couple of drops of the rose water and stir gently. Pour this mixture into glasses or bowls, and leave to set somewhere cool
Serve, with the chopped pistachios sprinkled over the top
To blanch almonds put them into a bowl with some boiling water. Allow to sit like this for a few minutes, then you’ll be able to slip the skins off easily - after this, chop them up thinly, made easier after being in the hot water
